100% Chenin Blanc grapes are machine harvested in the cool hours of the early morning at 21 to 22,5 balling and treated in the vineyard for oxidation with a small amount of SO².

Worked as reductively as possible and only free run juice was used. Settled for 48 hrs and light lees taken with racking. Inoculated with yeast and allowed to ferment @ 16-17Celsius. After fermentation left on fine lees (stirred up every two weeks) until bottling.
